So the $85 menu sounds good for Laurie and I. We will bring two Italian reds (I’ll see if I can pull off the same wine so everyone gets a good pour). May also bring bubbly to celebrate this auspicious occasion.
Tried to respond to your last comment via e-mail but sis not go through. You can NEVER have too much bubbly so I am all good with your selections. And I really do like the idea of the Franciacorta as a special Italian bubbly, Good move. If I was to make one comment around the Roederer it would be this is the type of evening where a vintage champagne would not be out of place.
Whatever is comfortable. My wife typically goes jeans and a nice top or a less formal dress. Nothing too over the top - comfortable is key. It’s not fussy at all.

If the above is accurate, we have 3 whites and 8 reds to go with our 4 courses. For the blind tasting, we can have 3 flights (happy to adjust as desired):
1st Flight (3 whites): Mix of 1 Italian white + 2 white Burgundy, with the apps and salad
2nd Flight (4 reds): Mix of French and Italian reds, with the main
3rd Flight (4 reds): All Italian reds, also with the main
