Great questions! The meat is shipped right from our ranch. The steaks are frozen, packaged in a Thermalast bag with frozen gel packs. Then placed in a pharmaceutical grade cooler and shipped overnight.
Most ranchers eat beef they raise, so that means the whole animal. Freezing the beef is the best way to preserve it. For us, the key is how it is frozen. A lot of the commodity beef is cooled with water. While this may cool the carcass faster, it also allows for some of the water to be absorbed. We think our beef is best air chilled, so that is what we do.

I cooked up a couple of your 24 oz ribeyes last night to major complements from the family, so I had to log on and order another shipment before the sale closed. In for a classic and an add on flank steak.

@Carrie_Morgan I’ll bet it’s nuts. Will we get an email notification of shipping? I got a cryptic text message with a link to: tracking.routific.com . That’s something I would normally delete as spam, but checked in case it was your shipment.
OK, that text was for delivery of my chickens from a local farm, not Morgan Ranch.
Could I get shipping delayed to late Feb or March? If it’s already shipped, no worries.
I thought about this - the whole thing is nuts and it’s amazing how it all happens. From Cow to butcher to packaging to Fed Ex. It’s really remarkable.

All of our packages are shipped overnight. So, if there is a day that does not work for you to receive it, please let me know and we’ll work together on delivery.
As I print labels this morning, my Dad and Uncle are out feeding cows and replacement heifers. The fat cattle in the feedlot get fed by our guy, Kirk. On Friday, my brothers return from overseas and sort cattle to harvest next week. The beef from those cattle will be able to send to you guys in another 45 ish days. I am in awe of how we’ve been able to work together and get all of the moving parts pointed toward a common goal.
And, being love bombed on BerserkerDay doesn’t hurt!
