I think I understand what he is saying, but I also struggle with the “gastronomic” term. Also perhaps autolytic is a much more analytical term than any of the other descriptors. It feels out of place.

In a different thread I’d have just said I don’t care for autolytic styled Champagnes but for this thread I felt dogmatic pronouncements to be more appropriate
