Wine is much more robust than most of us give it credit for.
I’ve had sparkling wine in fridge for a week, uncovered in a bottle, that still had plenty of fizz.
I would tend to agree, especially high-end wine. But in my early wine drinking life, I had plenty of $20-$25 bottles that were simply corked overnight or for two nights and didn’t quite hold up well.
Not me. #330 is the only dN wine I really have not enjoyed at all.
#385 (Lot 385 2019 St. Helena/Rutherford Cabernet Sauvignon, for beautiful Boris et al.) is a triple fantastic CS!!!
Obviously it’s very age worthy, I love this beautifully fancy beverage! 10 bottles left here !

Anyone have a wine preference/pairing (other than Guinness)?
Ran a non-blind introductory tasting for my daughters and a group of their friends over the weekend. Went over the basics including types of wines, how to read a label, how to order in a restaurant, how to use Winesearcher, and an aroma panel. Wines tasted (in this order) were a 2021 Scherrer Shale Terrace Zin, 2019 Patty Green Durant Pinot, dN 222 2019 Rutherford Merlot, 2015 Talenti Brunello, dN 385 2019 Napa Cabernet, and dN 279 2016 Skillogalee Shiraz. The runaway wine of the night was the Lot 279 followed closely by Lot 222. Good time and another good showing by dN’s from back in the Cam days!

Rich deep lovely leathery flavors, very complex nose, well balanced in spite of a big 15.6% alcohol, beautifully oaked and a solid triple Yum!
Drinking just fine now without a decant. However This can still age very well.

I drank a cabernet franc last year that I thought worked well. Do you have 101?

Lot 401 | 2021 Napa Valley Proprietary Red Wine, which needs more time.
I’ll try that pairing next year for St. Patrick’s. I hope I remember?

This July #401 will be 2 years bottled. That’s My usual start in on it time for BDX’s.
Generally a minimum of One year bottled to first try out my PN’s.
For some connoisseurs this is way too soon. Probably it is too soon, ideally.
Sometimes I have more than one case, so then I may start in early??

47% Cabernet, 39% Merlot, and 14% Malbec
With Corned Beef Brisket and shamrocks
Lot 344 2018 Barossa Shiraz.
I think it’s the oldest of the Aussies, and it’s drinking great!
Saturday evening: With Holy Grail Steak:
- 2018 de Négoce Cabernet Sauvignon OG N.40 - USA, California, Napa Valley, Diamond Mountain (3/15/2025)
Decanted 30 mins prior to serving with Holy Grail Tajima Rib Eye steak.
Similar to prior note Sept 2024. Lovely color, depth of color in glass, acacia flowers, cocoa aromatics. Really coming around in the bottle now. Ripe, balanced dark and red fruits, minerality and tannic long finish. 5 guests present, however, friend and myself "bogarted" this whole bottle as the ladies enjoyed Chardonnay. Wish we had two bottles decanted. Hard to put the glass down. (94 points)

@Timothy_B_a_l_l_a_r_d, great review. Someone had mentioned that these were like $18/bottle at the time, true? If so, what a steal! I don’t know how I missed this one.
I agree it is in a good spot. I think the 279 is the oldest (2016) and is also drinking well.
N.279 has always been the furthest along and most ready to drink of all the Aussie shriaz Cam offered. In my experience those hit their stride 6 plus years out from vintage so the others should be improving soon as well.
Unfortunately i drank most of my n.280 because I wasnt sure of its future growth potential with the screw top and used it as a cellar defender.
I opened a 56 Pinot two nights ago. Very pronounced & delicious red fruits on the front of the palate with an underpinning of darker notes (forest floor?), dark cherries & baking spices. Hubby was very impressed. On night two the fruit was more subdued with an awkward acid/sour note on the mid-palate and a very short finish. I think it’s time to drink these.
Great note, Tim. This was one of the first dN buys for me and it is really turning into a beauty.
Though, I am spending an inordinate amount of time trying to decide if “bogarted” should be capitalized.
