Same question as the Red thread, but for Whites/Chablis??
Interesting that when I look at total number in my collection, whites are on the decline, no doubt in number terms, mostly due to Premox.
From what used to be about a 50/50 split, Reds are now more like 3 to 1 and this ration is continuing to increase…
Producers for me now are much more less wide spread, as I am now sticking pretty much to the more tried and tested generally “safer” producers, so my sample selection is pretty focused now…definitely less in quantity terms, but also a higher quality level for me, and hopefully longer lived also.

How much has the Premox issue affected your buying/storing patterns of Whites and Chablis, and what producers do you still trust???
Have only been buying since the '04 vintage. I pretty much only drink Chablis. Still buy it despite prem-ox because I love it young (especially Fevre). I buy with intent to drink most bottles young while saving a few for aging so that it minimizes risk if they crash and burn. With little to no experience with mature Chablis, I am happy to not know what I’m missing. If some of the bottles I’m holding (mostly Dauvissat and Raveneau) for the long term turn magical then IMO it’s a Win-Win.
I have no expectation that any producer is immune.
I buy the occasional bourgogne blanc or village, and I did buy some 2007 Bouchard Corton-Charlemagne because it was the best young chardonnay I’ve ever tasted.
I’m finding it very easy to forget white burgundy with Pepiere, Luneau-Papin, Chidaine, Huet, and other Loire producers available and cheaper. Oh and Rhys Chardonnay
Answering the question at hand: Fevre, Bouchard, Buisson-Charles (me like), Christian Moreau, Ramonet.
I had a bad run with many white burgundies and thus drank a lot, slod a lot and did not buy much in the last few vintages. So cellar stock is pretty depleted. Only 80 bottles.
Based on past preferences, the producers appearing most frequently are:
Fevre, Bouchard, Raveneau, and then small numbers of others.
Of late H Boillot is the most impressive producer I have tried.
Never went into the deepend of white burg’s from Cote de Beaune for fear of premox and stuck with Chablis primarily. The Bouchard are all basicall CC though.

Unlike most peeps, I’m looking to acquire more white Burgs, not less, but I’ll drink them young. I don’t have much, but what I do have is:
Changed a lot for me because of premox, used to have much more Matrot, Ramonet, Sauzet, and Fevre but got scared off after getting burned on particular wines. Right now it’s something like:

Raveneau
Dauvissat
Leflaive
Carillon
Only have a few cases at best given premox, but probably:

Girardin
H Boillot
T Matrot (early drinkers)
Louis Michel
Who knows- handful of other people where I found a good deal or liked a taste enough to buy a few
Have drunk a crapload of young Matrot Bourgogne and Louis Michel 1’ers over the last few years on closeout or super low price auction buying, and I can’t complain a bit about those. Some of the best values ever.

Ampeau (now less than a case of assorted 1992/1995 Meursault/Puligny Combettes)
Roulot (broke my moratorium to buy some of his HdB cuvée)
And that’s it, except for a single bottle of 2007 Meursault Charmes from Olivier Bernstein…
I am fairly new to this and really love chablis in general. I have a total of 24 different domaines going back to 2003 and have yet to experience a wine that is premoxed. Keeping my fingers crossed.
I really like Robert-Denogent in the maconnais as well.
