I can’t believe I went 26 years without trying actual caviar. I’ve had numerous types of roe over the past few years, but never the legitimate stuff until last night while dinning at Autre Monde. Upon the first taste of our paddlefish caviar, I was hooked. I’ve heard about Champagne and caviar being a classic pairing, but is it as spectacular as I’ve heard? I can’t wait to splurge on a whole tin of the stuff and go to town with a nice bottle of bubbly.

For me it’s a texture thing. Just something that isn’t appealing to me, so it’s not the perfect pairing for me. But now I’m craving a burrata dish and champagne.

Mark, when you say “legitimate”, it’s not paddlefish, it’s sturgeon from the Black Sea. Beluga, sevruga, and oesetra are the quality levels (I may have the last two flipped.

For me, I agree that it’s a rock star combo.

I think caviar kills most Champagne. The REAL pairing for caviar is ice cold vodka.
