Well , this has been enlightening. I haven’t tried the fried chicken/champagne combo but I definitely see it in my future now. Not that champagne doesn’t go with almost anything.
But yes, vodka is really the best with caviar. I like to use frozen vodka cubes.

But agree on the fried chicken, or anything fried for that matter as also great fries work wonderfully. I guess it is the crispyness, richness and fat of these dishes that make it such an appealing combination with champagne.
What also works well, I think, is some simple slices of best quality Spanish ham such as Jamón Ibérico de Bellota.

Actually people are right. Gougeres give fried food a run for its money.
I love the tiny fried fish at Ping’s Seafood in Chinatown with Champagne or other sparkling wine.
Champagne is very food friendly in general but I don’t know that I’d say caviar is particularly wine friendly.
I believe honey bbq fritos have already been definitively established as the perfect champagne pairing:

Just have to add that caviar is the most overrated food on the planet. Closely followed by foie gras.
For me, the question is more about what food Champagne doesn’t do well with, and I have found few things where it wasn’t at minimum an acceptable partner, and often a remarkable one.
