Ok, I’m just going to pack a third case so I’ll have at least 12 slots for you guys - so we should probably make it dinner for everyone’s safety, even if Wu’s. If we’re going to do this, let’s just do it. Just lmk if you guys prefer Pinot-heavy vertical or Chard-heavy vertical within this lineup or a mix.
Wu’s is good for a crowd and of course no corkage fee. But need to bring stems. Other casual options are Pistoia (East Village or West Village - the former has more extensive menu) and Ubani (midtown or W Village) - very good Georgian food and gracious service. I think both are about $25 corkage. I can try to think of other options if these don’t resonate.
I’m agnostic on the Chard vs Pinot question. Honestly, I’ve only had your sparkler, which Vincent selected off the list at Humble Spirit.
I’m down to 6 bottles in my library for the 2020 BdN and Solera b/c I fell on the sword for some restaurants in Chicago, so sadly need to leave them there as winemaking reference wines, but I’ll bring along the new PN/Meunier bubbles and Meunier for sure.
Makes sense, sounds good! I went ahead and made a reservation at Wu’s for 14 people (their biggest table) at 5pm just so we have something on the books and don’t have to scramble. Definitely still open to other options!
Yeah I think you guys had my first sparkler (2019, with the pink dot label?) I’ve made another dozen since then and moved into bottling under cork. That said, I’m surprised the caps have held up like they have. The Solera was a NV with honey tirage under cork and muselet. I wrestled with reduction in both the 2019 and 2020 so have moved towards multivintage wines to ensure the base wines get enough oxygen before going back into a second ferment. So the Rosé sparkling is 75% 2023 Pinot Noir and 25% 2024 Pinot Meunier, brut nature.
This sounds fine to me, thanks Mario. As I’m traveling, might someone bring some extra stems?
Put me down, please! Should we bring Interesting or Complementary bottles or is this a PH only dinner?
If the former, as organizer, direct us as to your preference!
I’ll bring ~11 bottles. Use your best judgement ![]()
Don’t worry, I’m not bringing Solera or 2020 bubbles. They’re endangered species.
I was going a little green…
Wait – you were in Chicago?
I don’t recall, but you may be right. I’m sure you’re getting progressively better at it but I remember thinking it was very good.
I could take a couple extra glasses if needed.
In regard to the chard vs Pinot I think a mix might be good? A little PH sampler?
If encouraged to use my best judgment I will probably plan on taking an extra bottle of something, maybe either a Burg or Jura.
I did not pre-order the suckling pig when I called yesterday, was not sure if that was for everyone, but if a majority of people want that I can call back and see if still available.
No, but my wines are (were?)
Here are your options - we can do as many or as few depending on how frisky you guys are feeling.
(note no PH still wines in 2020 due to wildfire smoke.)

2019 Bracken Chard
2021 Bracken Chard

NV Rosé of Pinots (Noir/Meunier)
Holy bracken what a glorious line up. While I most definitely would love to try each and every one of those (I have only had the 22 and 23) it might not be very practical with ~11 bottles for 14 people right? Would end up being a very small pour for each? Maybe it would make sense to do an older, middle, and more recent vintage to get a sense of the evolution? Or maybe just focus on a few vintages that you’re particularly proud of/are showing well right now? Not sure the best way to do it but I trust your judgment! I think I’ll be feeling rather frisky if that helps.
I am also happy to defer to your judgement.
Not sure yet what to make of the storm for Sun/Mon. We are outside the City, so, just a heads up that our participation could be impacted.
Is this going to happen? When? This weekend is interesting, since my football team has the early am game in London (was going to go but decided it was a waste), and drinking wine with winemakers is always a good plan. You definitely need someone who has never had the wine before and is a rocket fuel guy. I can bring other stuff of whatever kind y’all want. I was rummaging in the cellar this morning and I found some interesting pinots and chards that I forgot that I still owned.
