Charcuterie is meat! We’ve prepared this charcuterie sampler with small-batch, limited releases we made especially for BerserkerDay 16.

Each Collection includes:

  • Smoked Magret Duck Breast with Saffron + Orange Sauce: We brined these boneless Magret duck breasts under saffron from the only saffron farm in the U.S. plus orange peel, shallots, and more before finishing them under a saffron-orange sauce. Slow smoked over fruit wood, these Magret duck breasts are fully cooked and ready to eat right out of the package or simple to heat and serve hot. About 1.2 - 1.5 lbs each. Store in freezer.

  • Jumbo Polpette with Duck-Balsamic Glaze: Tender meatballs of finely ground pork and our mortadella that we finished under a reduction we made with glace de canard, balsamic vinegar, caramelized shallots, and more. Fully cooked – simple to heat and serve. Four jumbo polplette in each 16oz package. Keep refrigerated or freeze for longer storage.

  • Boudin Blanc: Rich pork, chicken, and heavy cream in our silky, tender sausage with vermouth, ginger, nutmeg, clove, tarragon, and more. Ideal for Mardi Gras coming up! Four links in each 12oz package. Store in freezer.

  • Good Food Award Winning Culatello di Dorman: We hand trim the whole muscle at the heart of the ham–the most prized portion–to cure for 30+ days under black peppercorns and wine before we lace it up in the traditional pork bladder to age 10 months minimum. Pre-sliced, each package is ready to simple open and serve. 3oz package. Keep refrigerated.

  • Whipped Bone Marrow Spread: We roasted beef bone marrow before whipping it with ginger, soy, miso, caramelized onions, and shallots for a spread to serve with crusty bread, crackers, and more. 5oz container. Keep refrigerated.

  • "Ham Pastor" Ham Steaks: featuring spices inspired by “al pastor” flavors—adobo, mild guajillo chilies, orange, cinnamon, allspice, pineapple—plus Ash & Elm’s spiced pineapple cider. Fully cooked and ready to eat right out of the package or simple to sear or grill and serve hot. We like pairing these ham steaks with Eggs in Purgatory for brunch and with tortillas + grilled pineapple for dinner. Each package contains two ham steaks, about 1.2 - 1.5 lbs. Store in freezer.

  • Cranberry-Dijon Bison Pemmican: With a long culinary history in North America, pemmican is the ultimate hiking, camping, foraging, and hunting snack. Think of it as the classiest protein bar ever. We blended bison with cranberries, cherries, walnuts, Dijon mustard, and more. Two bars in each package, around 5oz. Keep refrigerated.

  • Queen Anne’s Terrine: a layered terrine we made with pork whipped with salted, cultured butter, garlic, and black peppercorns then sundried tomato + basil pesto then whipped Queen Anne’s Lace cheese with roasted garlic and spices. 8oz portion. Keep refrigerated.

  • Berserker Bling Bacon: we seasoned these extra thick-cut slices of our Jowl Bacon with a brown sugar rub with maple syrup, coriander, black pepper, cayenne, paprika, and Calabrian chili flake. each package of slices about 10oz. Keep refrigerated.

  • 'Nduja-Stuffed and Bloody Mary Brined Gordal Olives: Gordal literally means “the fat one,” and these plump, buttery olives are considered some of the best in Spain. Known for their fine, delicate flavor and firm, meaty texture, they’re a natural pairing with with our spicy 'Nduja, a soft, spreadable salame spiked with Calabrian peppers. (Pro tip: don’t toss that brine! We love using the flavorful brine of these olives as a base for cocktails, vinaigrettes, marinades, and more.) 4oz pouch. Keep refrigerated.

  • Guanciale Lardons: pork jowl we cured under garlic, juniper berries, black peppercorns, bay leaves, nutmeg, and red wine. Each package of pre-cut lardons is ready for your pan. 8oz package. Keep refrigerated.

  • Big Red Wagyu Beef Salame: made with porcini and a custom Big Red wine blend from our friend and winemaker Blake Trobaugh. Pork-free! 6oz link ready to slice and serve. Refrigerate after opening.

Orders of the Berserker Charcuterie Collection and Berserker Build-A-Board Collection ship free to the lower 48 during the week of Feb 10 for arrival in time for Valentine’s Day. Sorry, earlier or later shipping is not available. You’ll receive an email with tracking info once your order ships. Shipping to PO Boxes is not available.

Keep in mind that orders are shipped in food-appropriate, insulated boxes with coolants as needed, etc. and in the time frame required for the safe delivery of perishable products.

But it’s up to you to get the items in the package into appropriate refrigerated/frozen storage once it arrives.

Smoking Goose does not require a signature for delivery. If a signature is required for delivery, this has been added either by you or by UPS/FedEx (who can add a signature requirement for a variety of reasons including a history of theft, gated community, previous delivery issues, remoteness, and more). In our experience, UPS/FedEx adding a signature for delivery is very rare, but if it’s added to your delivery, know that it was not added by Smoking Goose and Smoking Goose cannot get it removed. If you’d like it to be removed, only you can do that and by contacting UPS/FedEx yourself directly. Again, the addition of a signature for delivery is extremely rare in our experience – all this is just fyi.

OUR STORY

Indianapolis natives and high school sweethearts (awww) Chris and Mollie Eley opened “Goose the Market,” a neighborhood butcher shop and specialty food market in 2007. Based on the relationships with farmers and the recipes that Chris developed behind the butcher counter, this family business grew into Smoking Goose in 2011.

Using old world craft and new world flavors, Smoking Goose makes over 40 varieties of slow cured and smoked meats, salumi, and sausages in small batches. All Smoking Goose recipes begin on the farm.
