It's Cinco de Mayo. What are you making?

Me? Carne asada tacos and beans. Marinated a skirt steak last night and started the beans soaking. Making guacamole and pico de gallo before I grill the steak. YUM!

Why is it impossible to buy corn tortillas in packages of a dozen anymore? All I could get was a package of thirty. HTF am I supposed to eat thirty tacos?

You don’t know how many times I have yelled this at my local grocery store… even the local tortilla makers are making packages of a million. If I only had a duck… I could feed the duck all of the extra tortillas.

I’m making margies for dinner. The end.

Hmmm . . . why didn’t I think of that? I see a trip to the liquor store in my immediate future.

Porterhouse pork chop and tamales with eggplant and tomatoes. Cinco de Mayo isn’t a very big deal around here.

Everyone is already partied out from the celebrations held here last weekend. I think left over pizza is on the menu tonight…

well, traci was going to make whiskey glazed salmon or something…I said, let’s go out for Mexican. So we headed over to La Pinata for a margarita and Mexican food. She had carnitas tacos, I had the New Mexico red chile enchiladas with a fried egg and carnitas. Very good.

Had the margaritas in the shaker 10 minutes after Stacey hit the door at 5:30p.

I’m still doing 1/3 lime juice, 1/3 Cointreau, and 1/3 Cuervo Tradicional, but I think I might tweak the recipe a bit.

We ended up having penne marinara and salad for dinner. We’re still on a meat break after FFII.

Btw Senor Hudak, Cinco de Mayo is a very real holiday but I doubt anyone pounding Coronas yesterday would know that.
