What’s the drinking window for your Pet-Nat? I am clueless.
Most Pet Nats are best enjoyed young, and I certainly had my fair share of the 2023 Pet throughout the summer of 2024. But I also think Pet Nats are one of those rare wines that shine both in their youth and with age. I attribute this to several factors: the tiny bit of residual sediment in each bottle, which I believe enhances the aging process; the naturally occurring CO2; and the fact that we don’t cold stabilize. The wine is still very much alive and can even spontaneously re-ferment at any time.
I periodically revisit my older Pet Nats—I have vintages dating back to 2018—and they remind me of aged Champagne. Over time, they develop richness and depth, with beautiful notes of honey and brioche but still maintain the nice, strong acidity. If I can convert enough Berserkers into Pet Nat fans, maybe there will be an interest in a Pet Nat vertical for BD17??

Don’t even hesitate on the pet-nat unless you don’t like bubbles or being refreshed or drinking something awesome. Easily could be one of my favorite bottle of bubbles I’ve had in the last few years and that’s comparing to some serious Champagnes, Ultramarine, etc.

Honestly though – your wine reviews and tasting notes are better than ANY of the critics reviews. I regularly recite your tasting note for our chardonnay to anyone and everyone who will listen. Down with Robert Parker, let’s get David Berman out there!!
