Btw I had a weird issue with my oven where it occasionally tripped a breaker, so anova is sending me a new oven! Great customer service.

With 20% off and 5.25% cashback on top of that, I pulled the trigger on the combi and the chamber vac.

I foresee some grilled cheese sandwiches in my future. Coconut oil on the outsides only, or inside/outside?

For reheating food, what is the go to?

Any tips welcome. I’m excited.

Why would I want a combi steam oven? What does it do that is so special?

I bit the bullet and bought one last week. My first use was to sous vide prawns and scallops for seafood pasta. The seafood ended up perfectly and uniformly cooked. Definitely a step up.

I’m looking to do a lasagna in my oven. Any thoughts? I was going to something like 200 degrees F, 100% steam until I got a temperature reading of 160. Does that sound rational?

Oops just saw this. The app’s stuffed shell recipe says 350 at 50% and I’m guessing it’s similar enough. Maybe 100% is too much for the perfect cheese at the top.

350 at 15% steam for the corn tortilla lasagna recipe. I doubt that dish is very deep since it’s only for 20 minutes once assembled, but a bunch of precooked ingredients.

I ended up doing 200 at 100% steam until I got to 140, then went to 350 with 10% steam for the final 20 minutes. I had one that I did in the oven and one in the Anova. People preferred the Anova version, though there wasn’t a lot of difference. To your point @Guillermo_M , I wasn’t wild about the cheese on top.

Since the lasagna, I’ve done beef a couple of times. The New Yorks I cooked were every bit as good as any I’ve done strictly on the grill. Flannery Hanger (Sous Vide to 126 and then 2 minutes on the grill) were the best I’ve had. I need to get in the habit of taking pictures

I used to make soufflés now and again - usually chocolate, sometimes something like Grand Marnier. After a good run I had a string of failures and gave up/moved on.

I just set up my new APO this weekend and I’m wondering if it will make success more likely, either via the precision temp control or the steam (or both). The app has a cheese soufflĂ© recipe but nothing for chocolate or Grand Marnier, and I didn’t find any that were specifically adapted to the APO on the web either. Anyone have any thoughts?

Just as a counterpoint, I updated my app/firmware and the app works much better now. It used to fail about a third of the time, and would tell me that it needed water when the tank was full. Now it works great!

Thanks for the tip about the firmware. I had no idea and was prompted to update it during my initial setup, so I did. I’ve had a glitch here and there which I attribute to newb syndrome, but no major failures.

I downloaded the App for the first time as I was taking it out of the box on Saturday so I assume I got the already updated version of the app. The app is what gave me the prompt to update the firmware.
