When we did dose trials, we did them two different ways.
The first was a standard bench trial, take the wine, pour samples, add different dose levels to see what tastes the best. Recheck your results. I don’t trust bench trials much.
So we took several of the dose levels that we enjoyed and disgorged a set of 3 to 4 bottles with varying dosage and let them rest for 3 months. Those all tasted like they had rebounded from bottleshock, so I think a safe place to start would be July.
meh, I’ve done the drive so many times now, it ain’t nuthin’ - and Al, you always have a place to stay if you come up - true for all my RL friends.
Stopped by the winery today to pick up BD orders and we were very fortunate to taste several wines (incl 2 of the sparklings) with Marcus. Marcus and Megan are such wonderful hosts—generous with both their time and knowledge. Needless to say, we ordered more sparkling (along with some Pinot Blanc) to go with our BD orders. If you haven’t yet, make sure to get some of the sparkling wines—you will be really happy to have them in the months and years ahead!

You’re probably referring to still wines but just in case, note that Marcus has suggested that the sparklers would benefit from a few months cellaring.
