WURSTSALAT - sausage salad

“Wurstsalat” or sausage salad is a classic dish from the south of Germany, Switzerland and Alsace. Mostly served in “Biergarten” beer garden (open restaurant) This salad brings back good old memories from my hometown Konstanz/Lake Constance and is the right dish for this “Affenhitze” hot weather in Berlin. Serve with a good bread. YES, a bit rustic, but lovely simple&honest and LECKER

Keep it simple! No olive oil or aged aceto balsamico


Ingredients
300g boiled sausage Fleischwurst/Lyoner or Mortadella
200g Swiss Emmental cheese
150g pickled gherkins/cornichons
5 tbsp water from the gherkins
5 tbsp vinegar
5 tbsp vegetable oil
1 red onion

Yes, LOVED that when I was stationed in Southern Germany in the 70’s. I think I would grill the sausages for a bit more flavor / texture if I made it now.
