Haven’t been to many but I’m surprised to see Troisgros so low in the ratings.
Agree completely. I continue to be amazed at accolades given to restaurants that try cutting edge techniques but forget the objective of food is to taste good. Steirereck is fantastic, great creative food accompanied by perfect service with every detail done right.
I’m not. It was the most disappointing “special occasion” restaurant I’ve ever been too.
Great to see Attica in there at 21.
The rankings aren’t important to me, but I like the diversity of the list (but I didn’t see much from Asia). Locally-sourced Scandinavian cooking continues to make a strong showing even though Noma got bumped to #2 after 3 years in the top spot. Nice to see Spain with so many in there as well. Austrian cuisine is underappreciated worldwide. South America also well deserves recognition of the cuisines from the many countries there.
Glad to see Peruvian cuisine get some respect. There are some amazing restaurants in Lima these days!
I have been to the sister restaurant of Astrud y Gaston in Santiago. Same Peruvian cuisine. Same owners but different chef. Same creative concept. That restaurant deserves big props.
An interesting list. I have been to several of the top 100. Probably 4 out of the top 20. I doubt my own ratings would be like this but you never know how this kind of thing turns out.
I would definitely have rated Troisgros in the top 10. Want to visit Celler de Can Roca!

I was fortunate enough to be in San Sebastian two weeks ago and ate at both Arzak and Mugaritz. Both were amazing meals but Arzak was spectacular. San Sebastian is so worth the visit.

Likewise, well deserved! Was there most recently about a week and a half ago and they are really knocking it out of the park right now.
They don’t say anything about methodology, but it’s hard to imagine more than a small handful of people (if any) have eaten at all these places in the last year. The rankings probably more accurately reflect the CW/zeitgeist than actual quality.
That said, a couple things I noticed:
- no French restaurants in the Top 15. If there were ever a sign of the decline of the supremacy of French cuisine, there it is. Not too long ago the list would have been dominated by the French.
- All of Asia, and especially Japan, is severely underrepresented. Peru, Brazil and Mexico all have as many restaurants in the Top 50 as Japan, and those three countries together have as many entries as all of Asia combined. Given the economics, demography, and Japan’s obsessive food culture, that seems preposterous on its face to me. England has more representation than Japan, which, despite the great strides the English have made recently, should be theoretically impossible.
My thoughts, I think I have not eaten at any of them and likely never will.
And it seems like a lot from Asia are really French food.

Tastes are subjective, and restaurant performance is widely variable. Examples of…
Arzak: It was terrible. Everything too salty, sent one dish back for being inedibly so, plating/composition was ugly, and service was bad - our waiter spilled a full glass of wine on our table and we had to argue with him that there was a better solution to that problem than refilling said glass from our bottle.
Steireck - great food, pretty poor service. We waited over 1 hour between 2 courses with not a word from the kitchen, the front of house, or the wait-staff. That inexcusable delay than meant that by the time we finished dinner, the beautiful bread/cheese cart that was paraded to all the other tables “disappeared” (ie, the server’s shift ended) by the time we were ready. We were offered a meager tray of 2 or 3 selections as a replacement. Then as a final insult we were charged for glasses of wine we weren’t served.
Martin Berasategui - relatively low rating but 2nd best meal I’ve ever had and impeccable, beyond-the-pale service including help the following day getting into El Kano in Getaria for lunch on a busy holiday.
