I had a mencia from Ribeira Sacra (D. Ventura 2011 Pena do Lobo) which wasn’t bad. This seems like a tough match to me and not really sure what would be better. Thoughts?

Priorat: Spanish Grenacha (Pingus) or S. Rhone CdP works for me with a BLT
with some bottle age, some Manchega and some olives on the side

haven’t tried it but a nice, honeyed chenin blanc seems logical to me. Montlouis or Vouvray demi-sec
I nearly always go with a Rivers-Marie Sonoma Coast Pinot Noir. Seems to work very well.

Well, Coors light and Dewar’s and water are the only alcoholic beverages I’ve ever had with a BLT and they were fine. Never even thought of pairing wine with it. Maybe that’s because I only get a BLT at the golf course.
Syrah for me, but Mel makes homemade mayo.
Northern Rhone. The best pairing for bacon is more bacon.

I don’t have any sherry on hand and really don’t know much about it. Tried it a couple times but no idea if what I had was representative of good sherry. There is a chance I will be in the area of MacArthurs tomorrow and see a number of sherries available but the only name I think I know is Lustau. Anything else that I should pick up to learn more about sherry?

Brian, I hope this isn’t too late as the answer is a definite yes. From Lustau, try the “3 en rama” series of finos/manzanilla. My favorite of the three is the Jerez de la Frontera (which appears to be the 58978 “Fino de Jerez En Rama” listing of the Lustau en ramas on that website).
The Equipo Navazos sherries are also excellent. I haven’t tried any on that list but I’d love to taste the #45, though you’ll notice it’s a tad more spendy than most fino sherries. I suspect that 375 of their en rama at $16 is also very good.
I didn’t see Valdespino on that site, but these sherries are among my favorite qprs. Try the Innocente fino which is fermented in old American oak barrels and also the Deliciosa manzanilla which is fermented in stainless steel. A couple of wonderful, differing, and very easy on the wallet sherries!
