I’ve been making a 100% Pinot Noir Pet Nat since 2019 - it’s absolutely wonderful. It’s dry (2.4 g/l RS), clean (disgorged), low alc (11%), and has a really beautiful palate of strawberry, lemon and crisp green apple. It’s such a labor intensive project for a small brand like ours, we cap production at 100 cases annually and we sell out every year. I started a sperate thread here on Pet Nats; I don’t think Pet Nats get the respect they deserve…but that’s a discussion for a different day. We also currently have a Brut Rose in the works: 75% Pinot Noir, 25% Chardonnay. It’s currently aging en tirage, the plan is to age it for 18 months before disgorging. I love sparkling wine, and hope to make more of it in the future. But I’m intrigued by the white Pinot Noirs, I love to experiment and I approach winemaking with an open mind. Based on these comments it seems like they are more highly regarded than, say, Pet Nats.
