The fish type itself is less important, just make.sure the prep has some fat to it.

Opened Saturday, drinking leftovers now. A true kabinett! Has the delicate style of Haag’s kabinetts, but a bit richer. Probably shut down (at least it seemed so on Saturday) but delicious nonetheless.

This was shut down hard 18 months ago. The White Cap ** Auslese from Molitor, from the same vintage, opened a few days prior, gave me the confidence to try again. This is definitely emerging from its cocoon, though I suspect it’s not showing all it has to offer yet.

Very reticent bouquet, but a delicate intensity on the palate with a bracing tart orange flavor and a resonant finish. It’s showing quite a bit of nuance, but in a whisper rather than a shout. Can’t really tell if that’s just the style it’s made in or just a little closed still. Don’t much care; I enjoyed it very much either way. It’s not terribly textured, and the lack of aromatic complexity is a bummer, so I’ll let my remaining bottles sit for a couple of years.

Haven’t had the D, though we liked the Keller with pointed cabbage that included mushrooms / a mushroom sauce:

A simple version of this could work and is very easy to make. Simple whole roasted chicken (with milder herbs), something like a halibut.

Those would be my direction (crab dishes sounds excellent as well btw), easy and simple prepared and let the wine take front stage.

My thought process is usually this: go to fish monger, pick something that looks the best on the day, cook said fish. Choose the fat and adornment/sauce/accompaniment based on what I bought at the market and what is happening in the rest of the meal. I’m sure you will be fine!

Sounds brilliant! I thought about mushrooms briefly, but when you already have a bunch of remoulade leftover from a weekend soirée, it must be crab cakes. I’m excited for tomorrow as I have never before had a Dönnhoff GG, and 2010 is such a great vintage. Yeah, only drinking those prädikat wines, I’ve been missing out, he he.

This exchange led to us having crab cakes, too! Jonathan was driving past Baltimore and I made him stop at Faidley’s to pick some up. Cheating, maybe, but they are really good. We had white burgundy, though a GG would have been delicious, too.

This afternoon drank the 2010 Dönnhoff Felsenberg GG. Just wonderful, especially after finishing up a run in neighborhood hills with a bunch of steep up and down. And yes, went with the crab cakes with remoulade. Also had a little cheese course that included Humboldt Fog and Cambazolla. Really basic, but all went well with the wine.
The wine was opened up on the cold side. Beautiful lemon color with a typical Dönnhoff nose of lovely candied citrus and stone. Maybe a little floral. When cold, it again hits as more typically Dönnhoff, with very inviting fruit and stoniness. Really nice, but as it warmed it opened up with a vivid savory note and more pronounced acid. It worked the tongue a bit with a tingling feeling, though it wasn’t spritzig in any manner. It was quite a wine that seemed to get tastier with every sip. Outstanding.

Another dynamite bottle of 2015 Keller Von der Fels last night. We’ve been through 2 cases of this and every bottle has ranged from really really good to fantastic. I just wish we could drink it more slowly once opened!

Tonight was my first Steinmetz wine, the 2023 Steinmetz Wintricher Ohligsberg Riesling Rondel, and it fully delivered on the expectations. Good ripe firm layered fruit (for the Mosel), but also great cut, mineral floral delicacy, and a screaming value at $29.

I haven’t had the Rondel but generally love the entire spectrum of Riesling that Stefan makes. Maybe I prefer the dry wines, but only marginally. Steinmetz is well worth taking a flyer on a wide selection, IMHO!

Yes, based on all the reports, I expected to like the wines. But always want to ‘test’ things for myself, so bought 4 of these 23 Rondels. Based on that first bottle, I feel comfortable purchasing with abandon!
