Which of these Cabots should I drink tonight?

Got my shipment from BerserkeDay, and I’m gonna take one for the team tonight. Which of these is the “most ready”?

07 Klamath Cuvee
07 Humboldt Syrah
06 EXT
06 Syrah Arias
07 Cabernet Sauvignon
07 Confluence

'06 Aria’s with and an hour decant

In another thread, John Cabot suggested holding the '06 EXT for 6-12 months as it seems to be suffering from bottle shock right now.

Got my sixer in as well. I’m going with the Klamath tonight. Already had the '06s from a prior order. Yummy stuff.

I’d say all the wines could use an hour or two decant, but especially the cuvee. I love the aromatics on it but they take a couple/few hours to show.
I had an 07 Humboldt the other night that was showing really well also.

I had a great experience with the Klamath recently:

Klamath Cuvee is the most open to me. I’d give the Aria’s another year or two in bottle. The 07 Syrah changed a lot over night on me but it was great on night one and two.

Excellent. Thanks, everyone for the feedback - esp. John. Will post impressions. I’ll most likely pull the cork on the Arias around 6:00 and sip on it every 15 minutes or so.

Had the Humboldt last week and it was tasty.

John, did these all get shipped or just the southern states?

curiosity got the better of me… just put a '07 cab in the decanter

Sipping on the Aria right now. This is going to be a big surprise to all of you. It is MUCH BETTER after it has been open for 90 minutes than it was at first. My initial impression (after pouring through that little contraption that makes the sucking sound - into a decanter) was “What’s all the fuss about.”

An hour and a half later, I think I’m starting to understand…

Jay, not surprising. It’s a meaty, smoky, beauty. Still pretty young so somewhat unpredictable would be my guess. Is the sucky/gurgly thing a Vinturi?

Yes! I was too lazy to go look at it and see what it was called. I only use it on really young wines that need a little turbo boost.

And “meaty/smoky” is exactly how I’d describe this wine straight out of the bottle.

The '07 Klamath is quite nice.

Of course I did not listen to John and did a “pop and pour”. Got back from my club ride beat, tired, thirsty, and late, so straight up I went. Killed a couple of glasses while in the hot tub watching a phat black otter about 50 feet away, on my dock, working mercilessly on a large fish, while my phat Golden Retriever glared out of the french doors. Large scale peppery nose. Crisp, slightly tart red fruit. Peppermint. Medium body, chewy finish. Crisp, satiating. I know this will be a terrible comparison, but it resembles some of the '09 Bojos that I have been slurping down like Kool-Aide.

PS. There is a lot of “phat” going on in my house right now . . . .
