I always make my native Swedish Xmas dishes, so brined ham in oven with a bread crust, pickled herring, meatballs and a Janssons Temptation of course. None of it very easy to pair with food, in my experience. It really is snaps and beer kind of food. But we can’t have beer being a winemaker for chrissakes (the snaps - no problem)!
So probably will try to get my hand on some sort of nice Riesling that has perception of sweetness, a style I myself don’t make. Any suggestions for a good German trocken that has just a hint of this to pair with this rather heavy food? It needs to cut through the grease with lots of acid, but mustn’t be too austere (as I don’t think it will go with the flavors).
We too will be drinking our last bottle of 2002 Piper Rare.
I am leaning towards birth year wines since our kids will be in attendance…'97 Dunn HM, '01 Togni. Others TBD.

Neither mine nor my wife’s extended family are big wine drinkers but they still expect me to bring wine. This is a good time to open stuff I like that won’t break the bank like Collection 242 and Bedrock.
We celebrate the night before but I have Louis Roederer 243 and Suduiraut 2014 lined up for a casual Christmas brunch.
Thinking a 242 or ‘13 or ‘14 Roederer brut, a vintage tbd Roederer rosé, Charles Heidsieck rosé “special edition” and then match some crowd pleasing reds to the food. With the anticipated chaos (small kids, multiple families) this is the time for wines that are good but not “the event” so 242 and the CH rosé just became frontrunners.
I don’t find a “special edition” on the Heidsieck website. Is it different from the Rosé Réserve?

Fewer people this year calls for fewer bottles… As Lasse hinted at the Danish Christmas dinner is centered in a very fatty food intake and so several palate cleansers are needed to not feel totally terrible at the end of the night.

It’s an interesting wine - it’s either based on 2005 or entirely 2005, and disgorged in 2019. I believe it was only released in NY to commemorate “Champagne Charlie’s” first to nyc. There’s the crowd pleasing rosé elements combined with mature notes, but bottle variation has been quite high.
