I am planning an old Cognac tasting, and wondering what I should serve with them.
I had a 17 course Cognac meal quite a few years ago.
The best pairings were: seared foie gras on date paste, a walnut salad, steak au poivre vol-au-vent, lightly smoked Serrano ham on buttered toast, crème brûlée.
The stuff that really didn’t do it for me was a lobster dish, grilled parsnip, a red berry tart, cheeses and a creamy chicken dish.
I can’t recall the other dishes right now…

Which Cognacs?
I’ve never really consumed alcohols above wine ABV levels, but recently encountered a Cognac that was good, but too pricey.
I’d love to see recommendations!
