We eat lots of veg chili. I would pair whatever you pair with meat chili. For us, that tends to be Zins, Syrah or Petite Sirah’s.

I think if he backed off the new American Oak it would be a different animal altogether. He sources fruit from some great spots. Everyone has their own style though.
