What to pair with Prum Auslese?

Can’t say for sure but the mere thought of it is making my mouth water.

My Kung pao chicken was a fine match. The bell pepper did not work, so ended up piling it on the edge of the plate, but the rest was delicious, even the peanuts.

That’s okay because the bell peppers don’t belong in the kung pao chicken either! Try the Fuschia Dunlop recipe, much better.

Many great pairings here. One of my favorite and probably not mentioned/overlooked. Brunch with danishes, donuts, and fruit. Its killer.

I don’t think of myself as a particularly altruistic fellow. So, it is with a certain amount of self surprise that I am sharing this with you, my fellow berserkers. Cream cheese blended with sriracha on a Ritz cracker with a few snips of fresh of fresh chives paired with a Prum 2001. It is one giant step forward for mankind, and I can’t help feeling sad for the thousands of German wine drinkers that never knew of this.

There is nor reason to eat something when you drink a Mosel Auslese. And there is even less reason to eat a German dish. Germany is not France. Traditional German wine is not made to be paired with food. Sure, a JJ Prüm Auslese can go well with some dishes in the sense that the dish tastes great, but the Auslese will suffer.

I enjoy the auslese on its own, but if you can find something that works well with it, such as bone marrow or the cream cheese with sriracha, it brings out nuances that I don’t remember tasting before. Particularly the bone marrow.

We opened a 2003 Prum Graacher Himmelreich Auslese GK tonight with a Cajun pasta dish. Was the perfect foil.

The assumption that German wine culture, unlike French wine culture, did not develop with and does not match with local food is simply false. The idea that Germans have been producing wine since the Middle Ages (with Riesling as the main grape) and not drinking it with their food is absurd.
