What to do with white miso paste

I bought white miso paste to make miso cod (ala Nobu), which was a great success.

But now I have most of a container of fresh white miso paste. I do really like the flavor, but don’t ever cook with it so am keen for ideas…

Try miso soup with clams and green onions. It’s my breakfast food in Japan.

I used to go to a restaurant that had a great miso salad dressing. Sadly they would never give me the recipe. You can find a number of recipes on the internet. Between those and your own taste you could come up with something good.

Miso Butter: mix equal amounts of white miso and room temperature butter together. If you need to, warm it just a bit to get the two to mix well, but you don’t want the butter to melt or it will separate. Miso Butter is great on grilled asparagus (or any other veggie), grilled fish, chicken, or on a poached egg. Try it in place of hollandaise for eggs benedict. My favorite Spring dish is grilled asparagus with a slow-poached egg on miso butter. If it’s the main course for a brunch, I’ll saute or broil a delicate flaky white fish and add it to the plate.
