THE BEST: Waffles I’ve evah had…Classic Fanny Farmer yeast recipe, but the key seems to be Ron B’s new All-Clad Belgian waffle maker
Cornbread, using Jimmy Red cornmeal. Also had some rendered Benton’s bacon fat saved up, so went all out!
I’m using my sourdough discards for waffles and they are coming out great. Didn’t tell my wife beforehand, served blind. She said these are the best waffles i have ever made, what did i do differently.

Tonight I made veal cutlets in an onion and caper reduction with roasted new potatoes and opened a 2016 Produttori del Barbaresco Barbaresco.
It is a good night.
80% unbleached KA all purpose and 20% rye sourdough. Been trying to push the cook longer.
Spatchcocked and partially deboned “Ranch” chicken on crispy baby potatoes (chicken flavored with 2 packs of Hidden Valley Ranch Dressing powder)
New item this year. Salted bacala in a yellow tomato and caper sauce. It’s a twist on something I had seen with red tomatoes.

I pulled off steak au-poivre with Flannery filets. Nearly singed my eyebrows but it was phenomenal. Family dug in before I could take photos which was one of the best compliments. Not difficult but dangerous! I did the flaming outside with an extinguisher close at hand.
