I had to add some water to the shrimp to get more of a sauce, as opposed to a paste, fwiw – but you’ll see a comment on that in the directions; I still kept it on the thick side, as I didn’t want to dilute the flavors too much. Hope you enjoy!

I have used her simmer sauces, available in stores. Used to be able to buy a pair of larger tubs at costco, but now all I see are smaller jars on grocery store shelves. Definition a quick and easy weeknight solution.
Hmmmmm! I can’t say I’ve ever seen her sauces.
They usually have them at whole foods, probably not the big chains. Open one, throw in some potatoes, veggies, shrimp, chicken, serve with rice, you got a pretty good meal in half an hour.
Good to know. I’ll take a look next time I’m there, which may very well be tomorrow because I am currently sin cerveza, which is no bueno.
Thanks again for the recipe. That marinade is awesome and I added a diced serrano chile for some heat (chicken at home is more often breast, salt only and quite boring). I deboned the leg and it got covered thoroughly inside. I was leaving the gym and only had to pick up coconut milk on my way home. Perfect way to off those two chicken quarters and have leftovers today.

Made some cooked pancetta. Had a nice piece of Iberico belly.
Rubbed with garlic.
Salt/ pepper/ juniper/ brown sugar/ mace/ curing salt #1/ bayleaves/ thyme/ rosemary
Cooked in a circulator at 158 for 24 hours. Pressed flat in the fridge for a day.
Almost has the texture of speck, really liking this. Going to see how it works with pasta.

Made bistecca alla fiorentina & mezze maniche alla Trattoria dei 13 Gobbi for dinner yesterday (the last family dinner with my 2nd son, Lorenzo, as a bachelor, his wedding is later today). Had some Valpolicella to go with the meal.

Well a little garnish never hurt anyone.
Had some plum tomatoes hanging around a bit too long. Wanted some rigatoni. Threw some salmon on the grill.
Does this count as chicken parm?
It’s been a quiet few weeks of cooking here, with mostly the usual suspects on rotation to accomdate our yearly January reset. But our friends at Green Meadow Farm had some turmeric leaves that were too exciting to pass up, especially as there was some lovely sea bass in the freezer.
Made a paste of frozen fresh shredded coconut, cilantro stems, garlic, ginger, and two kinds of green chili, rubbed the fish with salt and lemon before slathering on the paste, and then wrapped in the leaves. Mostly this prep is made with individual packets, both for presentation and because one larger pack won’t fit in most steamer baskets. We of course used the steam convection oven and the results were superb!
Served with cauliflower rice and wok tossed baby bok choy with ginger, garlic, soy, it was a beautiful array of subtle and complex flavors. Not the most beautiful dish, to be sure, and I can’t say I took pains plating it. But the fish was perfectly moist all the way through, and I loved the combination of elements. To be honest, I am not sure I could really taste the turmeric leaf - might have to try without such an aromatic paste.
Still well within macros for the diet and felt like a treat.
We were supposed to go to the Walter Anderson museum then to dinner at the White Pillars. But my wife took some medicine for her eyes that had the opposite of the intended effect. So we were home for the evening. Chili dogs, tater tots and onion rings. Baked apples for dessert not pictured.
She had Conecuh I had some Cajun sausage which was unremarkable.
And Auburn beat South Carolina.
Made some pasta with the pancetta I made recently.
The pancetta crisped up great!
Simple red sauce.
A little fresh mozzarella.
