Maybe not the best picture, but salmon poke bowls with radish, broccoli, ginger carrots, pickled cucumbers, avocado and sushi rice. Not a classic combo, but I enjoyed a husky young St Georges St Emilion to go with it.

local grass finished strip steak & mixed mushrooms, horseradish sauce made from the root with some sour cream, rapini with garlic and pepper flakes, 2021 Tensley Colson Cyn.

Ribeye w/ red wine reduction, mashed potatoes and some sautéed kale with red pepper flakes.

Should’ve opened something with a little more body with the steak, but this Lessona did ok enough.

There’s a right way and a wrong way to serve a steak.

Deboned chicken, wet brined then stuffed with chopped local green olives, roasted mixed mushrooms, lemon basil and oven roasted shallots and onion. Trussed, salted the skin and fridg’d overnight. Removed the twine 1/2 hour in at 475º. Super crispy skin and really moist, Used the skimmed drippings with whole grain mustard and herbs for a sauce, plus 4 cups of stock made with the roasted carcass.

A bit of fun with the new photoshop AI (original pic below) . The plate was cut off in the pic so I opened it with Photoshop Beta, expanded the crop area and used the generative fill tool with no description and it filled in the missing part of the plate and blended in the table.

Made rodaballo a la plancha (pan-grilled turbot) again tonight, with a side of simple linguine w/ tomato sauce. The wife made the salad. All washed down with 2022 Cloudy Bay Sauvignon Blanc.

Unexpectedly had an evening to myself, which is incredibly rare. Went easy with NY strip, less involved Jared’s famous potato gratin, and arugula salad. Delicious!
