Thursday evening wine, sadly missing Chris to share this wonderful Merlot:

  • 2018 de Négoce Merlot OG N.34 - USA, California, Sonoma County, Bennett Valley (9/18/2025)
    Notes fairly consistent with January tasting, but this Merlot really rocked tonight. Wife kept chugging it down too fast- guess she loved it too.

    Double decanted 1/2 hour before serving with leftover grilled chicken thighs and Quinoa.
    Nose: Dark plum with gentle oak spice. Touch of Mocha.
    Color: Deep Crimson. Nearly opaque in BDX glass.
    Palate: Very smooth entry- bottle time has been kind to this Merlot. Dark plum, black tea, touch of raspberry.
    Finish is medium +, with nicely integrated acidity, modest tannic finish. Glad to have 5 left. Will hold for 3-4 years longer. (92 points)

Friday evening dinner: Started out with a terrific 2021 Touraine Sauvignon Blanc purchased from de Negoce.

  • 2018 de Négoce Cabernet Sauvignon OG N.68 - USA, California, Sonoma County (9/19/2025)
    Double decanted 1/2 hour before serving with grilled Pichana steak.

    Nose: Ripe red plum, touch of licorice/ anise. Sort of medium on aromatics at first.
    Color: Dark Red.
    Palate: Started a bit weak at first along with the aromatics. Wine gained fruit and aromatics about 15-20 minutes later during meal. This Cabernet will not knock you over, fairly "gentle" for a mountain Cabernet. What it does have is good mouthfeel and assimilates well with food. Nice red fruit profile on a medium plus length finish. Really enjoyable Sonoma Cabernet.

2018 de Negoce Walla Walla Merlot OG n.86
Opened up a bottle of this that I found in my wine fridge and needed something to go with chicken parm. Was excellent at PnP with a little vinturi air. Smooth tannins, med-light acidity, picking up the typical merlot red fruit notes as well as some darker fruit from the incorporation of CS and syrah. This is in it’s prime drinking window now so if you got them pop em!

de Negoce Lot 255 Napa Cabernet Sauvignon 2019

I was lucky to purchase two cases of this back when it was released as a cellar defender for Lot 200 and as part of Cam’s Christmas gift. I put all of them away at the bottom of my wine rack and have largely forgot about them. I think this is probably bottle 3 out of 24 that I just opened and whowee am I glad I did. This one was totally drinkable upon receipt (unlike Lot 200) and now is just kicking ass and is in it’s prime time. After an hour of air in the decanter my first taste was a rush of blackberry, tobacco, cocoa, plum and cassis. Tannins are there but in a good way because this bad boy is at a monster 15% abv and with all the lush hedonistic dark fruit in this the tannin balances it out and makes it downright delicious. I didn’t pair it with anything but this would match up well with a number of foods but it doesn’t need that. Given where this is at right now I would rate it a solid 92 or 93 with enough air. Don’t know if this will get any better than it is so you might as well open now if you have any in cellar.

Thursday evening, make a sandwich and pop a bottle for TNF:

  • 2019 de Négoce Cabernet Sauvignon OG N.100 - USA, California, Napa Valley, Rutherford (9/25/2025)
    Popped and poured with Roast Beef/Turkey/Guacamole sandwich on Ciabatta roll.
    Nose: A bit "syrupy" to start off. I've had this wine before, knew likely needed some time. After dinner with TNF game, raspberry and plum poke out, along with some floral notes.
    Color: Dark red - not "inky" though.
    Palate: Dark fruits - touch of blackberry, mixed with dark plums show here after wine has opened up. There's a ton of fruit typical of 2019 vintage w/o the 2018 structure found in top Napa Cabs. I'm going to keep this on a Thursday evening rotation, savoring those beautifully structured '18 Cabs for good meals on Friday evenings with the wife. (90 points)

  • 2018 de Négoce Cabernet Sauvignon OG N.71 - USA, California, Napa Valley, Calistoga (9/26/2025)
    Double decanted back into bottle 1 hour before serving with grilled Filet Mignon steak dinner.
    Nose: Absolute monster nose of sweet florals and cassis. Want to bury your nose into the glass for minutes on this Cabernet.
    Color: Inky Red. Gorgeous.
    Palate: Cassis, dark plum, wrapped around a long finish provided from the gobs of glycerin and tannins. Complete Iron Fist in Velvet Glove Napa Cabernet here. Purchased 3 bottles, 2 consumed. One of my favorite de Negoce Cabs sourced by Cameron Hughes. (94 points)

230 2019 Washington state cab. This wine is so good. Has gone from a cellar defender to on par with my favorite dn napa cabs. It’s bigger than the Napa ones but so delicious. That paired will with pasta/red sauce.

Agree about how well it is drinking now (well, a year ago when I popped one). I do think it will mature nicely (I’m holding back a couple of mine) but it’s so delicious right now there is no crime in having it now.
