Vin d'orange (and other homemade aperitifs)

I couldn’t find an existing topic for homemade aperitifs.

Seville orange season is here and I’m planning on making vin d’orange for the third year in a row. I usually use either the David Lebovitz recipe (from his book Drinking French) or Samin Nosrat’s version. I’ve used cheap white wines in the past, which they recommend since so many other flavors are added. Nevertheless, now that I’m into wine I’m tempted to use something a bit nicer, though that might be blasphemous. (My Bedrock Ode to Lulu box is coming at the same time…)

Anyone else make aperitifs at home?
