Tonight’s supper was nearly the last of our Xmas Rib Roast, sliced and in sandwiches, with a simple vegetable soup: white beans, green beans, carrots, tomato, onion, & garlic in a light low-salt vegetable broth, with Herbes de Provence & black pepper. The soup was a little quiet initially, but enhanced with some additional black pepper. The sandwiches were made with coarse-grained Dijon mustard and accompanied by olives and B&B pickles. The prime Standing Rib Roast from Kaune’s has done very well by us. All was very much enjoyed with a 2000 Ridge Zinfandel Llewellen Vineyard (all old vine Zinfandel (77%) and Carignane (23%)) - fill just below the short capsule; cork saturated a quarter inch (probably a porous cork); nice nose and flavors of red and dark berries and cassis; mid-palate with barely adequate acidity, good fruit, and light tannins; and a medium long berry fruit finish.
The meal was rich enough that we didn’t need dessert.
