What do u guys like to drink with Uni, I am going hardcore on Uni late this month and was thinking of what white wine to serve with it? I am leaning towards 1990 Bubbles i have saved, any ideas or recent pairings?

I think muscadet would be a great match - had uni recently with bubbly and it was a so-so pairing.

I think the Viñedos de Ithaca Odysseus PX from Joseph and Silvia Puig would be an excellent match. Still, dry and made with Pedro Ximénez grapes.

Last week I had a dish (at a restaurant, we keep Kosher at home) of spaghetti in a fresh Uni sauce. I had it with some relatively dry Cava which worked well.

I’d suggest some dirt and sweatsocks first. [whistle.gif]

I LOVE Uni. I would think any of the classic wine and oyster pairings would work, since they have a similar briny-ness. Bubbles of Chablis I would think.

Third Keith’s suggestion. I had 2002 Gravner Breg with oysters this summer and thought it was a heavenly match.

+1 to Keith’s suggestion.
A skin-fermented white would do well. Preferably something not too phenolic, with some fruit and good acidity.

Gary, you haven’t said how it is being prepared, but assuming it’s sushi, you have to account for the rice. Sushi rice usually has vinegar and sugar in it.

That said, eating good uni is an orgasmic experience. I do not believe any wine could make it better, so I would be looking to add a mild contrast between bites to get ready for the next one.

If I had the time and the uni to experiment (quite a fantasy on both counts!), I would try some wines with a little residual sweetness. Something soft, maybe a slightly off-dry Chenin Blanc. Not bubbles or anything that could take your attention away from the uni. Dry bubbles could seem quite harsh with this.

A punch from Tiger’s wife, to deaden my tastebuds and coat them with blood, beforehand.

Some foods were not meant to be paired. Drink a great wine before hand and after but just gorge on uni in between flirtysmile

probably something off the wall like Austrian Welschriesling or Croatian Grasevina… these can soak up a lot of tangential flavours
