TUSCAN APPLE PIE with olive oil&pine nuts

Trust me, it worked well…

Ingredients
800g apples
3 eggs
200g sugar
200g flour
1 tbsp baking powder
1 organic lemon (peel&juice)
100g melted butter
3 tbsp olive oil
2-3 tbsp pine nuts
2 tbsp sugar

26cm/10inch springform pan

Looks great and I believe it!

For a dinner party, my wife made a pine nut tart finished with rosemary whipped cream and it rocked!

Its in the oven!

Had some troubles with my oven getting to temp tonight so cooked for quite a bit longer than prescribed but pie/cake came out fantastic. Very lemony and just the right amount of sweetness. A Keeper.

I am happy to see that you enjoyed my cake! As all my recipes are pure&simple.

BTW, some people my wonder why I make so often cakes. Unfortunately in Berlin is it quite difficult to find a real traditional bakery&patisserie anymore, as almost all use cheap pre-cooked products and only reheat it. As a consequence it is cheap, but the quality is lousy.

Finally, isn´t it wonderful the smell of baked apples&dough in the house?!

Martin, this sounds really delicious and we will have to try it. One question: are the apples you use the less tart (less acid) kind? I would guess that would work better.

Peter, it is always a gamble to find good tasty apples. I use only organic apples and look for juicy ones, good fruit mixed with good acidity. Last year I had great apples called “Braeburn” from New Zealand. I also use apples called “Elster” or “Boskop”.

Thanks! Braeburn are pretty common here, and this gives me an idea of what type works best.
