Tomato Water ?

I put up some Purple Cherokee tomatoes and after blanching and peeling the skins off , I got some nice tomato water.

I picked up some nice King Salmon (WF), grilled the salmon made a tomato relish and cucumber sauce… plated it with tomato water.

What have you done with Tomato water? The purple cherokee water was very sweet, I actually thought it might be a bit bitter but not at all.

Gourmet Cookbook uses it for a number of soup bases. They also recommend freezing it to pull out in Winter months when local tomatoes are long gone.

I think it’s great for a lighter feeling gazpacho, yet retains that very tomato taste.

I’ve been making a lot of tomato water recently. Most is frozen and will be used to bring tomato flavor to risotto and plain brown rice. I messed around with making a “bloodless mary” to bring to a party as a shot but the results looked like I was passing urine samples so I bailed on that idea…

When I make tomato sauce for pizzas from canned whole tomatoes, I drain off the water and simmer it to reduce it and use it in sauces.

Just roasted some tomatoes on the grill… and the resulting roasted tomato water looks …killer

Made a Scallop dish!

Scallops/Chorizo on a bed of Kale with a succotash ( Jalapeno laced with Trinidad Scorpion juice, dicedn cherokee tomato, corn, pickled onion ) in Tomato Water
