Interesting dinner at Nouri, one of the fine dining stalwarts that have been around for the longest time in Singapore. Not typical fine dining flavours, quite ecleletic and included plenty of spice. Not bad but felt a bit dated.

NV Gaspard Brochet Champagne Brut Nature Assemblage PN + CH Tome IV - France, Champagne (10/10/2026)
Brought to a birthday dinner at Nouri. 650 bottles produced. 50% Chardonnay, 50% Pinot Noir. Disgorged 23 Jan 2025, 3g/L dosage. An annus horribilis marked by mildew and oidium but the result was excellent. Open-knit and less austere than some Gaspards that I have had before, slightly oxidative, delicate red fruit in a style that I love. Agree that initially it was more Emmanuel Brochet in style with the slightly cider vibes but developed Gaspard’s signature salinity with air. As usual with Gaspard, a beautifully poised and balanced wine. (94 pts.)

NV Billecart-Salmon Champagne Brut Réserve - France, Champagne
Under Mytik, but dark golden in colour and showing some development which suggested an early-'00s bottle. Lost most bubbles and the '90s and earlier bottles of house NV champagnes were more complex and interesting. (89 pts.)

2023 Ossa Wine Chardonnay Ossa - Australia, Tasmania
Initially reductive, but opened up nicely with air with expressive, ripe citrus fruit that was quite Burgundian with high acidity and dry extract. Reminded me of an excellent Puligny - very impressed. (92 pts.)

2024 Savage Wines Never Been Asked to Dance - South Africa, Coastal Region, Paarl
More open-knit than my last bottle, very pale in colour compared to the Ossa alongside with less acidity and sweeter than expected but more typical Chenin than the last bottle so enjoyed this better. (91 pts.)

2019 Lucien Crochet Sancerre Rouge La Croix du Roy - France, Loire Valley, Upper Loire, Sancerre Rouge
Slightly overbearing oak at first, but developed well with air to become more restrained and Burgundian. Would pass off as a good Bourgogne but not at the level of the '15 I had a few years ago which seriously punched above its weight. (90 pts.)

2015 Domaine Charvin Côtes du Rhône (Le Poutet) - France, Rhône, Southern Rhône, Côtes du Rhône
Superb nose with some VA lift but still managed to be restrained and Pinot-like for the vintage despite the density and sweetness of Grenache. Wonderful value as usual from this producer. (92 pts.)

2021 Grosset Riesling Polish Hill Clare Valley - Australia, South Australia, Mount Lofty Ranges, Clare Valley (5/10/2026)
Lean and compact with tensile citrus fruit, searing acidity was still present but had softened since my previous bottle three years ago. As always, superb quality for its price point. (92 pts.)
