Corollary is one of the newer Oregon wineries that really has me excited. Their focus is solely on Traditional Method Sparkling wine. I met Dan (their owner) about a year ago and have been impressed with what he’s doing. A lot of OR Sparkling wine has left me wanting, but he really gets it and makes a Sparkling Wine that doesn’t try to emulate Champagne and instead stands on its own two feet while being a worthy producer for those that love Bubbles.
In full disclosure, one of my closest friends is their tasting room host right now, but I’d be giving my honest thoughts even if she wasn’t involved.
Anyone looking for a new Sparkling Wine producer should absolutely look towards Coroallary!

Corollary recently opened their tasting room, so it was finally time for me to pay them a visit!
[list][]2020 Corollary Cuvée One Vintage Brut - USA, Oregon, Willamette Valley
There is a lovely freshness to the nose with balanced tones of pears, red apples, peach blossoms, orange peels, baking spices, vanilla beans, and a touch of brioche. The Medium bodied feel is deft and balanced with crisp, high acidity that is fresh and mouthwatering. This is a fun bubbly from Corollary and an excellent introduction to their style. (90 pts.)
[]2019 Corollary Blanc de Blanc X Omni - USA, Oregon, Willamette Valley
The nose is fresh and fragrant with a very pristine take to the tones of white peaches, lemon drop, green apples, almond paste, pears, white fruits, saline, biscuits, and some roasted nuts. The nose is borderline delicate, but there is enough heft behind it to hold it together. The Medium bodied feel shows off the freshness of the nose while possessing tart and mouthwatering, high acidity that has a bit of bite right now. I’d like to see where this goes with a few more years of aging. Too much aging and it will lose the vibrancy that is so tantalizing right now, but a few more rounded edges can certainly help. The nose is lifted and fresh with vibrant tones of limes, peaches, spiced pears, lemon peels, white fruits, sea shells, saline, biscuits, acacia flowers, and a touch of pastry notes. This is wide open and giving right now in a way that is so enticing, yet with some cool tension that adds some intrigue. The Medium bodied feel shows off the balance and vibrancy of the nose with racy, high acidity that has a bit of cut. This is gorgeous and with a wide open, pristine style that really draws you in. This likely could use a couple of years to smooth out some rough edges, but don’t hesitate to open it now! (92 pts.)

The nose is lifted and aromatic with fresh tones of peaches, almond paste, green apples, pears, sea shells, nectarines, nougat, baking spices, and some biscuits. There is excellent depth and a real seamless quality that is lovely and enticing. The Medium bodied feel shows off the freshness of the nose with racy, high acidity that has some excellent cut. This is just lovely. A few years can help to round out some rough edges, but it’s also just so sexy right now. (92 pts.)
[]2018 Corollary Cuvée One Vintage Brut Extended Tirage - USA, Oregon, Willamette Valley
The nose is deep and layered with gorgeous tones of warm dough, vanilla extract, brioche, baking spices, spiced pears, red apples, yellow flowers, and some Meyer lemons. There is excellent depth with a real sense of style here. The Medium bodied feel is well balanced and rounded with crisp, high acidity. This is gorgeous and drinking so well. Could it age? Totally. Do you need to age it? Not really. (93 pts.)

The nose is fresh and balance with tones of orange blossoms, creamed peaches, raspberries, pears, red apples, chamomile, toast, and cinnamon spices. There is good complexity, but this lacks somewhat in the depth category. The Medium bodied feel is balanced and fresh with tart, high acidity. This is a fun and fresh Rose bubbles, but it does lack a bit of depth across the nose and palate that would ratchet this up a notch or two. (89 pts.)
[]2020 Corollary Momtazi Carbonic Vintage Rosé - USA, Oregon, Willamette Valley
The nose shows off some of the bubblegum notes of the carbonic, but it isn’t as heavy as I would expect. Behind that are fresh and lively tones of peaches, berries, nectarines, tangerines, Meyer lemons, citrus notes, rose petals, biscuits, and some baking spices. The Medium bodied feel shows off the liveliness of the nose while possessing tart, high acidity that also shows some excellent integration. This is interesting and fresh, but I also wouldn’t age it as it doesn’t show off too much autolytics. (90 pts.)
[]2019 Corollary Momtazi Carbonic Vintage Rosé - USA, Oregon, Willamette Valley
The nose is lifted and fragrant with well balanced tones of fresh picked red berries, pomegranate, nectarines, pears, rose petals, some bubblegum notes, cinnamon spices, and biscuits. This shows off a little more depth than the 20 and has a real expressive side. The Medium bodied feel shows off the freshness and expressiveness the nose with tart, high acidity. This is for more immediate drinking and it’s a lot of fun to drink. (91 pts.)
