Domaine F Servin Chablis Butteaux 2007:
Loved the nose- reminded me of an unusual combination of a tidal pool, liquified minerals and yellow fruits (some tropical). In the mouth more yellow fruits appear, along with tart green apples, citrus oil, honey and sea salt. Touches of flowers (lilacs?) dash in and out, as does a slight bit of cherry pit and iodine, but those flavors are mostly fleeting, yet add to the wine’s complexity. Overall the only worry is that, at times, the acid seems a touch out of balance, bordering even on untamed! I do think this is a nice wine, however I am not going to hang on to a bunch to find out what the wicked acid has in mind for the future. I’ve just been disappointed too many times.

I am picturing John carefully nibbling all traces of cherry meat off the pit to get an unadulterated sniff… ![]()
Then one must wait until the remaining bits of cherry meat disintegrate or the specimen is tainted.
