TN: 2020 Paul Pillot Bourgogne-Aligoté (France, Burgundy, Bourgogne-Aligoté)

I admit to being a bigger Aligoté fan than the Average Joe but this is simply a very nice wine by any metric. Obviously Paul Pillot has made it by now so this is not exactly breaking news. Highly recommended!

    An awfully delicious nose with slightly tart lemony fruit, reductive leesy notes, chalk and a hint of cream. The fireworks continue on the palate which has some richness and density but also fantastic acidity that provides great energy and zip. Somewhat on the tart side but then absolutely excels with whatever small bite or lighter fare that you might have. Markedly salty, evaporates really fast. Serious stuff for the appellation, just top notch winemaking.
