I wonder if describing singularity is like catching a whisper, bottling incandescence. There is an evanescent quality to this concept, perhaps this wine. It’s Sauvignon Blanc. And yet, it embodies so much more. There is no other Sauvignon Blanc like this. The waxiness of a mature Hermitage Blanc. A slight hint of petrol from a Prum Kabinett. And yet the green bitter but not necessarily grassiness of a Loire Sancerre or Chenin Blanc. An amalgamation of so many things, so many notes. This 2017 is still very young, not fleshed out. It has a tropical presence with white and yellow fruits plus melon, but far deeper than an archetype Sauvignon Blanc. Viscous, dense, sappy yet not overtly sweet. A very full-bodied, chewy white.
So I paired this with broiled Florida lobster, lightly seasoned just with butter, sea salt and smoked paprika. The smoked paprika was so $$$. Twice baked potatoes and asparagus. The Vatan could not have been a greater pairing. Had both the weight and the tension to work with this meal. I had debated Chardonnay, but this was it.
