TN: 2010 Domaine William Fèvre Chablis Grand Cru Les Clos

2010 Domaine William Fèvre Chablis Grand Cru Les Clos - France, Burgundy, Chablis, Chablis Grand Cru (6/27/2026)
I recently had this with my wine group. I rarely write notes these days but this wine deserves its moment in the spotlight. Pours light, pale gold, youthful. Some reduction but opens beautifully to mature lemon chiffon and underripe stone fruit. The fruit is compact and very pure. The aromas continue on the palate which also shows the classic sea spray and minerality. None of the marzipan, butterscotch, heaviness that older Chablis can experience. This wine is stubbornly young. Wonderfully lifting acidity with a vibrant presence. Super fresh. It really holds well throughout the night. If anything, it becomes more expansive with air. Just an incredibly wonderful Chablis in a perfect place. I admit my trepidation with a 15 yr old Fevre. I believe this was sealed under Diam. Whatever worries I had, were immediately dispelled by the color in glass, and first sip. I don’t recall the importer on this bottle, but it was purchased on release and professionally stored. The Fevre GC wines under Diam do seem to be evidencing that glacial aging that has been discussed. 2012 Cote de Bouguerots hasn’t budged in years. I appreciate the freshnes, but do prefer some development. Guess I will kep waiting.

And this is the rub. I’m appreciating freshness over development at this point in the trajectory of premox. But with Diam, you may have no choice.

Makes total sense. But with the realities of Diam - meaning the almost total lack of premox - it looks like time to reconsider the landscape for those bottles.

I’ll take ultra slow development over what has happened to some of my 2014 Dauvissat bottles under natural cork!

Too many premoxed fevre to be upset about a slow developing diam fevre. Great note!

I recently got six packs of 2014 Fevre Le Clos as well as Vaudesir. Can anyone recermond how long it might be good to wait and open one?

Frankly, I would say another three years minimum. 2014s are immensely structural, and under DIAM can still be relatively closed.
