I haven’t opened one of these for several months, and it was fascinating to see the differences already evident.
Right from the start, this smelled joyously of light cherries and earth, and even though it was completely tight and unforgiving, it was teasing us with great things to come. Things in the mouth had yet to come together, in fact it was a bit angry at being tasted so soon after pouring. So we decided to play its game and we decanted for several hours, only pouring with some delivered Vietnamese food. At this point, with the food, it came out dancing, with crunchy cherries and beautiful minerality, and a long finish.
I’ll wait a few more months to open any more, but the difference between this and the last bottle was impressive.
