Light yellow-white in the glass. Reticent nose on this just-opened wine that hints at crispness, salinity and granny smith apples. More expansive on the palate than the nose, with tart apples, bracing acidity on a bone-dry frame, and a fairly lengthy finish that I am continuing to savor as I type this. Undoubtedly young, yet still enjoyable, and given the concerns regarding pre-mox, hard to fault anyone for drinking this now as opposed to rolling the dice, but off tonight, I think this wine will get significantly better with more time.

Many thanks for the note. I’ve got a couple of bottles in the wine fridge that I’ve been debating opening but based on your experience I’ll keep them. I did crack a bottle a couple of years ago and was totally smitten with its nectarous, thrilling delights - good stuff, eh?

Nice note Bob. As a Chablis layman, I tend to find interest in vintages like 2004, 2007 and probably 2008 (haven’t had too many yet). Are the riper characteristics of vintages like 03 and 05 more transparent in Chablis. Seems like your 05 had plenty of acidity but perhaps more fruit than minerals?

Rich, I would not in any way compare '03 to the '05 vintage in terms of ripeness - even (dare I say it) Raveneau’s wines left me somewhat underwhelmed in '03. So while '05 may be riper & rounder than '04, we are really talking here about a question of degree, and not a huge stylistic difference. Off last night’s showing, and assuming I am willing to let a couple sit in the cellar as opposed to consuming them near-term, I have no doubts that this wine would eventually blossom into a “perfectly traditional” Chablis.
