This was in such beautiful condition. The first sniff reveals some lavender and apricot (botrytis?). There’s plenty of smoky mineral too. It is so fresh in the mouth, with barely a hint of toast and mushroom development. There a suggestion of citrus and the wine is complex and engaging. The finish has so much salty iodine and is long.
50/50 chance i click this and it’s about premox, so i’m glad it wasn’t

Un vin qui a besoin de temps pour se mettre en place. Au départ, j’ai pensé à un meursault de Boisson-Vadot, avec de nettes inflexions grillées et citronnées. Le caractère chablisien (miel, fougère) vient ensuite, avec beaucoup de trempe. Compact avec des saveurs particulièrement prenantes. Cet été, j’ai trouvé le Clos 2007 géant (19/20, d’emblée).

Superbe expression typée, savoureuse, avec un très beau citron confit. Pensé Clos 2000. La classe.
Chablis 1er cru Vaillons Dauvissat 2002 : 16,5/20 - november 2011
Olfaction chablisienne pour le coup : croûte de fromage, miel d’acacia, ananas. Une richesse (un aspect déluré) pouvant faire penser à un vin de Raveneau. De l’oxydation aussi, sous forme d’odeurs de pomme, de praliné (qui gênera nettement certains participants). Bouche à l’unisson, de belle vitalité, fine et longue, ample et tonique (mais un brin oxydée).

Nez réduit laissant se faufiler des notes encore un peu hésitantes de mirabelle et d’agrumes. Bouche délicatement miellée, plus que sérieuse, en attente, compacte, grasse en milieu de bouche pour une finale nette, minérale, salivante.
La bouteille de Dauvissat qui m’a réveillé était 1990 Clos. Je n’ai jamais bu Vaillons—je dois changer cette situation
