2000 Pol Roger Champagne Cuvée Sir Winston Churchill - France, Champagne (1/25/2020)
Absolutely delicious now, but with plenty of life left, this was richer than I expected, and showed both fresh fruit (Macintosh apple) and a toasty, wheaty character. Where it shone was the finish, which carried on for as long as I could wait before taking the next sip. Fabulous bottle.

Thanks! DO you find that the SWC needs a couple of hours to show its best? I’m no expert on the wine, but the ones I’ve had (both old and newer) seem to need like 2 hrs to open up.

This one opened up much quicker. 30 minutes.

I’ve really been into 2000s lately. The Cristal I had a couple months ago was superb.
