2000 Domaine Sabon – Cuvee Prestige – Chateauneuf du Pape
15% alcohol on the label, popped and poured. Very little sediment. My last bottle from a case of 12 purchased on release. Drank over 2 hours. Maturing cherry red. Nose of mild cherry kirsch and a hint of wild herb. The palate is soft and retains some freshness. Light red fruits, soft tannins, some freshness. For me, this is fully mature and a pleasant start to the week.
