Last night’s pasta was enjoyed with a 1993 Ridge Alicante Pagani Ranch (75% Alicante / 25% Zinfandel) - This was Ridge’s first Alicante vintage from over a hundred-year old vines; fill a half inch down from the capsule; cork saturated about a half inch; color a dark, dense ruby-garnet; rich mix of red and dark berry fruit; adequate acidity; with a medium long red and black fruit finish; and lots of sediment in the last couple pours.
