this was popped and poured at a party
only 2 of us drank this so it sat open for 2 hours or so

at first it has the acrid, freshly opened nose of a new Bottle
10 minutes in it was softer of nose but tired
the palate quickly turned on and was good to vg all the way through


I don’t subscribe to all the reanimation ceremonies of older wine but I don’t know if decant or audouze or seance would wake up this 20 yo village wine

Totally agree.

I hope Im not being to provocative saying this but sometimes Im shocked at how even very experienced burg geeks with very deep cellars will pop and poor a burgundy and pronounce it is past its peak. For me its SO rare that I open a burgundy (of almost any age) that doesnt significantly improve with air. As an extreme example, I frequently see wines with no fruit and no nose blossom into wonderful wines with gentle areation.

I often see an aroma show up after an hour or so
only to dissapear after another hour

so the boilerplate response I am shocked to see experienced paltes pop and pour and miss the glory cuts both ways
IMHO

so if 05,02,01,99,96,93,91 are too young
06,04,00,98,90 are possible goes
and 89,88,85 are debatable over the phase of the moon upon drinking…
It still comes down to bottle by bottle

plenty of 15 to 20 year old burgs have been beautiful 10 minutes into the wine

and this bottle came from a cellar run during a party.
Hard to say let’s drink the 89 roumier. Do you have a decanter?
And maybe 3 hours?

Reality and geekery are hard to match often
which leads me back to bottle by bottle

I want clear but I wasnt referencing your situation. Just burg drinking in general. I wouldnt have turned down a chance to drink that 89 roumier!

hitting the positive bottle has so many landmines to pass through

89 Roumier was a lot more enticing than 2004 Caymus SS
