We drank a '12 CdC last night among a good group of Champagne; 2000 Ployez Liesse d’Harbonville, Krug 168eme, Egly Grand Cru (2016 base), and Laurent Perrier Grand Siecle Iteration 24.
As has been my prior experience, '12 CdC is still showing its dosage. I haven’t opened any of my bottles yet and will wait another few years or more before I do. I think it will turn out to be very good once its baby fat integrates.

How was the Ployez? I have some buried in a stack of shippers that I need to unload and am trying to get a sense of how urgent that task is.
Not a nun’s fart on opening, but plenty of fine bubbles in the glass. Rich and dense. It may be on the downslope compared to prior bottles according to Gilman, but to my palate it seems to be at plateau, where it has been for a few years. I’m not in a huge hurry to drink my remaining bottles. It was very popular with the group. Served mainly with a 9 pound Hong Kong-style fried lobster. The richness of the Champagne and the lobster complimented each other well.

I had a ‘12 Comtes last December and my bottle showed atypically rich and even a bit tropical on day 1, but was really terrific on day 2 as acids came out to play and the dosage receded. I have a bunch more (very glad I do) and I’ll give them some time.

I don’t think you really need two days. I’ve had a couple 12s where I opened and recorked about 4 hours before dinner and they’ve showed quite well.

Any other vintages you all would recommend? I assume ‘04 (I have some on order) and ‘08 would be up there. Curious if you’d pass on ‘14 to pick up others.
I would 100% pass on 14 for other vintages.

Also, I haven’t seen much discussion about ‘05
05 doesn’t win side-by-sides, but I do think as a single bottle experience it is a gentle, early maturity cdc. And in balance.
I also think they added too much dosage to the 14 & it will be too sweet young. 10 years from now, who knows. Overall, when it comes to big houses, I have yet to taste a 14 or 15 that would lead me to buy them over preferred vintages.
Taste/Try anything you like. Everyone’s palate will vary. But I have clear preferences right now.

Have 1 bottle of the 12 and thought about popping one soon. I loved the 07s when i tried them years ago.

A recent 2006 was showing really well. Among my top 06 experiences.

Not in my experience.
interestingly, that has not been my experience with the 2007. I had that wine at the winery before it was released and loved it. But, when I tasted it just after it was released and for about 6-12 months thereafter, it was not nearly as good. After that time, it started getting better again and I really love it.

I love 06. I bought 5 cases and I’ve drunk through about half. 04 and 07 are both excellent. I wish I bought more 07. I also bought 08, 12, and yesterday I bought 14. I also need to buy some 13 at some point. 05 is a pass for me.
