The blessing of Kabinett Trocken

I like Spätlese Trocken and also Auslese Trocken. My dry Riesling development was mostly via Alsace and Austria. I just don’t like the profile of Kabinett Trocken.

You’re not alone. Kabinett trocken, especially from Hofgut Falkenstein, can be a little too austere and too acidic for many drinkers, especially in certain vintages. But if you give them time, they can surprise you.

Twenty years ago, many Spätlese or even Auslese trockens were less ripe than today’s Kabinett trockens.

On another note, I like it when a traditionally made red wine, say from Produttori del Barbaresco, has a tannic bite or austerity in the beginning. They just need time to open up. It’s a question of style and personal taste.

For me this a very important remark. Doesn’t only refer to aging in bottle - time open in the fridge for a week, or a a month makes a significant difference with the wines to opening up.

Anyone who can consistently tell the difference between kabinett trocken and spatlese trocken is a better taster than me!

A recent 1997 Molitor Graacher Domprobst Kabinett Trocken Auction from the Domain was nothing short of utterly profound.

Indeed. That was the point of mentioning Karthàüserhof and Grünhaus. The most recent examples are from the beginning of the millennium. And they are so great now
As are the Qba, Kabinett, Spätlese, Auslese Trockens from the 90’s

A lot has changed at Karthäuserhof and Maximin Grünhaus over the last dozen years.
