Tonight we had a light supper, to compensate for the big Spanish dinner we had last night. We had three cheeses, St. Andre, Hudson Valley Sheeps’ Milk Camembert, and Goat Boucheron, with lavender-rosemary honey, pear-vanilla preserve, and fig preserve, with mixed nuts. Accompanying wine was a 375ml of 2005 Chateau Rieussec. The Sauternes was somewhat sweeter than I anticipated, but paired nicely with the combinations of honey or preserves and the cheeses. My favored pairings were the honey with the goat, the pear with the camembert, and the fig with the St Andre. I ate mostly hazelnuts and and almonds which were enjoyable with the various combinations.
