When I first walked up I thought the same thing.
Hey Andrew, when you salt yours well in advance do you lay them flat or on a rack like this here?

I’m lazy and just salt them on a plastic mat, rather than use a rack. Probably better to use a rack, as you want to keep the surface as dry as possible.

My meat guy (Preservation Meat Collective) just called and said he has two purebred wagyu cows hanging. Really I don’t need any more beef… I swear, this stuff is like crack.

Have Dino ribs from a similar cow hot off the smoker! They’re so damn rich.

Kids b-ball season is over, so let’s do it! Happy to set something up and get @Adam_Noble and a couple of other friends over. Will be low key though - I did a dinner with @Mark_Y and we didn’t even get plates out. Everything came straight off the cutting board :slight_smile:

This can be so much fun. Did a dinner about six months ago where we grilled a lot of meat, with various sides. Then the main event was some British wagyu that ended up being some of the most beautiful beef several of us had ever had. Just sliced the steaks and left them on the boards, sprinkled some salt on and it was 8 of us standing around the board, eating and washing it down with wine.

It was just such a great feeling of focusing on the quality of food and preparation, with people who really appreciated both. Those are cool moments.
